Monday Meal Prep: Katherine’s Meals for the Week

As many of you know, our almost 20-year-old daughter became very ill with influenza A during the first two weeks of January, which developed into bronchitis, which developed into bacterial pneumonia, and finally into the early stages of sepsis. stage. After two trips to the emergency room in the first few days of January, she was admitted to the hospital’s ICU unit for several days. (We are so grateful that they had sepsis at the beginning, otherwise it could have been much worse. You can read more here.)

She lost a lot of weight and her recovery was slow, but she felt fine and her blood work was good enough to move back to Murfreesboro, Tennessee, where she lived and attended college. (Thankfully, her term starts tomorrow instead of earlier in the month like many schools do, so that gives her more time to rest and recover!)

She moved back home to Murfreesboro today and I sent her a week’s worth of meals so she can eat nutritious food but not have to think about cooking and can focus on continuing to recover and go to school. This is what I did for her:

Food I made for Catherine:

She came up with a list of foods that sounded good and I based my meals around:

5 meals of ground beef and onions with rice (I freeze these to defrost and reheat when she needs them.)

4 meals of salmon and rice

Quinoa

Homemade Granola Bars

Homemade Energy Snacks (I added protein powder to the mix to make these heartier!)

Extras I sent with her:

Also brought her fast food/snacks: Oatmeal packets, yogurt and granola, turkey and cheese, Quest energy bars, cuties, steamed vegetables, precooked chicken, apples)

She’ll buy some bread, milk, and a few other items, and she should have all her meals and snacks ready for the week!

Other things I cook/bake:

While I’m cooking, I also made a few extras for our family this week: sourdough bread, 3 loaves of French bread (it’s rising in the picture above and looks so much better after baking!!), Energy snacks, granola bars, rice, quinoa, ground beef and onions (I’m adding potatoes and peas to dinner this week).
