Meat and Potato Crust Quiche with Flax Waffles ($10 Family Dinner Idea)

Why you’ll love this Meat and Potato Crust Quiche with Flax Waffles

Now the price of eggs has dropped again (I’m on sale at Aldi this week for $1.99 a dozen – yay!), I’m ready to bring back all the breakfast vibes at dinner time! This is another family favorite that can feed a crowd without breaking the budget. This quiche will come together if you start with precooked meat and use frozen hash browns so Quickly! The ingredients are flexible, so feel free to mix in cheeses and meats, or even add in some leftover cooked veggies if you have them.

Flax muffins are a frugal, flexible recipe too! I used this recipe to make simple whole wheat muffins and substituted ground flax seeds for some of the whole wheat flour (the recipe itself was great, but I didn’t have any whole wheat flour and didn’t have the time to pull out my mill and grind the berries). Makes almost two dozen and my family loves the leftovers as a snack!

  • 6 cups shredded potatoes (Aldi – $3.25 for 10 pounds. You can also use frozen hash browns instead) — $0.60
  • 6 tablespoons vegetable oil (Aldi – $2.89 for 96 tablespoons)– $0.18
  • 1 pound sausage, or any other meat of choice (Aldi – $2.89 for 1 pound) – $2.89
  • 2 cups milk (Aldi – $3.05 per gallon) – $0.38
  • 1 8 oz. bagged shredded cheese (Harris Teeter – $1.49 per bag) – $1.49
  • 10 eggs (Aldi – $1.99/ticket beat) – $1.69 (Yes, this is way more than the original recipe calls for)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons parsley flakes or Italian seasoning, optional

Total for two quiches: $7.23 (serves 8-10)

Flax Muffins Ingredients:

  • 2 1/2 cups flour(Harris Teeter – 5 pounds $1.97) –$0.25
  • 1/2 cup ground flax seeds(Aldi – $3.29 for 70 tablespoons)– $0.38
  • 3/4 cup sugar(Aldi – $2.86 for 9.5 cups)– $0.23
  • 2 cups buttermilk*(Aldi – $3.05 per gallon) –$0.38
  • 1 egg(Aldi – $1.99 per dozen)– $0.17
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

*I made my own buttermilk by adding 2 tablespoons of vinegar to 2 cups of milk and letting it sit for 5 minutes before using it in the recipe.

Total flax muffins: $1.41 (makes about 20 muffins)

Other ingredients:

  • 2 cans green beans(Aldi – $0.50 per can) – $1

Total dinner: $9.64 (serves 8, including leftovers!)

How to Make Meat and Potato Crust Quiche with Flax Waffles

1. Make the meat and potato quiche as directed here, follow my double ingredient list two Quiche.

2. Make flax muffins as directed here, substituting 1/2 cup ground flax seeds + 2 1/2 cups flour for the 3 cups whole wheat/white flour the recipe calls for (or make the recipe as is!). (I’ve also included the full recipe on the recipe card below.)

3. Heat the green beans or other vegetables of your choice.

Meat and Potato Quiche Instructions

  • Preheat oven to 425°.
  • Grease a 9-inch pie pan and set aside.
  • In a medium bowl, combine the grated potatoes with the oil and press evenly into a pie crust shape.
  • Place this “crust” in the preheated oven and bake for 15 minutes, or until starting to brown.
  • Remove crust from oven and layer with cheese and meat.
  • In a bowl, whisk eggs, milk, salt and pepper.
  • Pour this mixture over the other ingredients and sprinkle with parsley or Italian seasoning.
  • Bake for 30-45 minutes, or until a knife inserted 1 inch from the edge comes out clean.
  • Cool for 5 minutes, then cut into wedges.

Flax Muffins Instructions

  • Preheat oven to 350 degrees.
  • Beat the eggs and sugar together.
  • In another bowl, mix together the dry ingredients.
  • Add dry ingredients to egg mixture, alternating with buttermilk, until combined.
  • Place batter into greased muffin tins and bake for 15-20 minutes.

Instructions for use of mung beans

  • Drain the green beans and heat in the microwave for 1-2 minutes, until hot throughout.

*I make my own buttermilk by adding 2 tablespoons of vinegar to 2 cups of milk and letting it sit for 5 minutes before using it in the recipe.

Flax muffins can be stored in an airtight bag at room temperature for 1-2 days (make sure they are completely cool before placing in the bag). If storing longer than this, place it in the refrigerator or freezer.
