We love our muffins and I’m so glad to try something new with these high protein breakfast muffins! They reminded me of McGriddles from McDonalds, which was a little sweet and a little salty. good!

These protein-packed muffins are a great way to start a new day (or a delicious mid-term snack that keeps you going until lunch).

Silas and Jesse love to heat them with butter, and I thought they were with butter and rain syrup drizzle.

They are best warm, right in the oven, but you can heat the remaining muffins the next day (they freeze well too!).

High-protein breakfast muffins

Ingredients for protein breakfast muffins

  • 1 cup Kodiak Protein Pancake Mix
  • 1/3 cup chopped cheese (I used mozzarella because that’s what I had on hand. I thought the cheddar would be especially delicious!)
  • 9.6 oz. Pack of fully cooked Jimmy Dean turkey sausage
  • 6 pieces of bacon, cooked and chopped (also use 1/3 cup bacon slices)
  • 3/4 cup milk (all, 2% or Fairlife)
  • 2 tablespoons maple syrup

How to Make Protein Breakfast Muffins

1. Preheat the oven to 400°F.

2. Grease 12 muffin tins (or lined with muffin or sprayed with non-stick cooking spray).

3. In a large bowl, combine pancake mixture, cheese, sausage, bacon, milk and maple syrup. Stir until well combined.

4. Divide the mixture evenly into muffin tins.

5. Bake in a preheated oven for 18 minutes or until the top turns golden brown.

High-protein breakfast muffins are cooked and ready to eat!

6. Let cool for a few minutes, then remove from the tin can and serve with extra maple syrup if needed.
