Homemade Chewy Granola Bar (Stop Buy Store)

Welcome to my 2025 series that stops buying store purchases, and I challenge myself to learn about the items I usually buy in the store. Today, we are trying a homemade chewy granola recipe that is so delicious!
My first try homemade granola bar!
Can you believe I never made granola from scratch?
My sister posted her granola bar recipe on this blog a few years ago and I’ve always wanted to try it but never made it!
Recently, I thought it was time to try making a granola bar, but I didn’t have the ingredients for my sister’s recipes, so I searched the internet and found recipes that could fit my own.

This homemade chewy granola recipe is so good!
I was very happy with the results of these – sweet (but not too sweet), easy to make, and took a big blow to our entire family!
Now, I have to try my sister’s recipe (I’ve heard a lot from a lot of people love it!).

Ingredients for homemade granola bars
- 1/4 cup butter
- 1/4 cup honey
- 1/3 cup packaged brown sugar
- 2 cups oats (fast oats or rolled oats)
- 1 cup crispy rice (I covered it with healthy cocoa soaking because that’s what I have.)
- 1/2 teaspoon vanilla
- 1/4 cup to 1/2 cup mini chocolate chips

How to Make a Homemade Chewy Granola Bar
1. In a medium bowl, stir the oats and cereals together.
2. In a small sauce, melt butter, honey and brown sugar over medium heat.
3. Bring the mixture to a boil. Reduce heat and cook for 2 minutes until the sugar is completely dissolved.
4. Remove from heat and stir the vanilla.
5. Pour the wet mixture over the dry ingredients and mix thoroughly.
6. Line a small pot (12x8x1 or similar size) with parchment paper.
7. Pour the granola mixture into the pan and press down to about 3/4 inch thick.
8. Sprinkle the chocolate chips on top and press them into the mixture.
9. Place on the countertop for one to two hours (until completely cool).

10. Cut into strips, place in an airtight container or Ziptop bag, and refrigerate or freeze.

- 1 cup Crispy rice I covered up the healthy cocoa puffs because that was what I had.
